  • “Be the change you want to be.”

    Simple to do? or Hard?

    I think it’s easier once you get there, but it’s extremely hard to get there… That’s why events like this retreat can really help kick-start and rejuvenate you- body, mind and spirit.

    I am always striving to better myself in all areas of my life- health, wealth, spirit, quality of life, etc. If you want to give yourself a boost in the right direction, I highly recommend doing something like I have this weekend at Ocean Resort.

    Started the morning with a zen/hatha/yin type yoga class.

    It was refreshing.

    Then we were back in the dining hall for breakfast. Green shakes hit the spot.

    Another Raw meal- soaked oaks with berries and cashew/almond milk with a serving of fresh fruit.

    After breakfast we had a little break to chill out and then back for some Gourmet Raw Cooking Classes. Here are some Raw “meat”balls about to go in the dehydrator.

    I’m going to get the recipes for all the stuff we made and shared it here. Our teacher was the amazing chef Carol, who is also a certified Raw Chef. I am going to get certified as a raw chef somewhere, somehow.

    Check out this Raw Meal- Fresh Cabbage from the garden, with tomatoes, orange peppers, fresh zucchini cut into angel hair strips.  and our meatless meatballs made out of cashews, basil, onion, (and I forget what else)

    I came in our hotel room to load some pictures and Painter had hacked my facebook account. Lol

    This place has been fun for him because we don’t need to leash him and he can rip around the yard. Our dinner RAWsome, ofcourse (I’ll share pictures later) We also went in the steam room and infrared sauna.

    The Vegan Challenge has been going off without a hitch. Here is a surprisingly accurate recap on my vegan meals yesterday. (Like the title says- my attempt at food blogging, lol)

    Yesterday we bought some stuff at Choices. I cropped Mike‘s stuff out of the picture;) I got Ezekiel Bread, beans, frozen spinach and peas, Amy’s Soup.

    While we were shopping, I couldn’t help but notice this cereal. Has anyone out there ever tried it?

    Is it called Holy Crap cuz it’s good, OR cuz “HOLY CRAP THAT’S EXPENSIVE CEREAL?!”

    On the way home we stopped at our local produce palace. (it’s good quality and inexpensive). Do you get your produce somewhere different than where you buy other stuff?

    SO here is EVERYTHING I ate yesterday (so not fancy..let me warn ya)

    For a snack it was a handful of walnuts and dried cranberries

    And for lunch it was a salad. I remembered to take a picture half way through eating it! Oops.

    Then we ran some errands and I got a Soy Latte. For dinner I had a toasted piece of Ezekiel bread with Tofurkey slices and a pint of mustard!  I had 2 of these!

    And for a night time snack, I should have had veggies or fruit, but I opted for the sesame sticks that Mike bought for himself, but I am eating them!

    All in all, the Vegan challenge has been really easy. It is a matter of no cream in my coffee. The scenarios where it usually gets more difficult is on weekends, when you go out for dinner or are out with friends. Butter and cheese seems to creep its way into everything, but I’ve done it before, so I know I can carry on with this confidently:)

    I have a lot of respect for food bloggers. Although I post recipes and take pics of my food now and then. To do it all day, everyday would be challenging. But if that was your career, you just do it… I WOULD DEFINITELY NEED A BIGGER KITCHEN… Excuses, excuses hey? POOR ME….lol

    In triathlon training news, I took yesterday completely off. I was supposed to go to a workout class taught by my friend Hannah, but I cancelled. I needed a day of no exercise.  Tonight my club is running, we are working on Tempo runs. I am supposed to swim today, but it looks like I will take that off as well. It may sound lame, but I’m not taking swimming off because I am tired, I am taking it off because my skin is having a minor allergic reaction to something today and I know the chlorine is going to make it flare up more. Too bad they didn’t make face bellaclava’s for swimmers. I would soo buy one. I am becoming more and more obsessed with swimming, I love it… BUT I HATE the chlorine… ick…

    Well, time to go…working on some neat-o mosquito things this week! Hope your having a great day!

  • Ahhhh Saturday!

    And it’s pretty nice out here in Vancouver too. Not that I’ve been outside much…YET.

    TRI training update;)

    I woke up this morning, walked to Tim’s to get a coffee, then pretty much went straight to the stationary bike. On my schedule today was a 90 min bike, at an easy pace- keeping my rpm’s around 90-100…

    I had planned to get outside for my bike today, but I have to do some maintenance on my bike before I take her on the road and I haven’t had time yet. So another long ride on the stand still bike. Since I’ve been training, I notice that time is going by quicker during workouts. I biked for an hour and 30 min and it definitely didn’t seem like that long.

    I am a water fiend though. I drank this much water at only 32 minutes into my ride!

    When I was done, I got back upstairs and made a shake asap.

    What kind of shake you ask?

    Ingredients

    mixed berries
    frozen banana
    cilantro
    parsley
    cucumber
    ginger
    lemon juice
    orange juice
    ginger
    celery

    Sound gross? Well it tastes soooo refreshing! YUMMY. It is just like my wake and shake, except with some berries and oj for added sweetness.

    After that I had a couple bowls of goldfish. Not vegan and full of preservatives, but they taste so good. Here fishy, fishy, fishy…

    Mike and I are letting our Costco membership go after the end of the month, so we stocked up on some frozen berries, goldfish, (chicken, eggs, milk- for Mike), paper towel, walnuts, pickles, my favorite lotion Nutraderm, stuff like that….

    Sorry, got off topic…back to training:)

    I missed my club bike ride on Thursday to go to the Canucks game. I felt bad for missing it and also was eager to make up for it….until my club mate Klaus (who is training for an IRONMAN!) informed me of some tips written by IRONMAN Champion Chris McCormack. Chris says:

    - Recovery is king! Always err on the side of recovery in your training program.  Recovery takes many forms, and body maintenance (massage, Yoga etc) sleep and rest are imperative to the game and the mix.

    -Guilt attached to any missed session is more harmful than missing the session itself.  Guilt is what limits most people in our sport. If you miss a session for any reason, put it behind you and move forward. Don’t play catch up and don’t worry about it. Its done, move on!

    Sound advice! I will put that behind me and move on….. Tomorrow I have a 60 minute run with the club and then a swim workout. THEN…the SPA with my girlfriends! Perfect way to end the week!

  • Hello there!

    This is a happy, positive blog, but I briefly have 2 complaints….

    I rushed to Long and McQuade music store last night to get a desk top mic stand before they closed. I got home and opened up the box and it is missing a bunch of pieces….

    Looks like a metal plunger!!  That’s all that was in the box. What the heck am I going to do with that???? GRRRRR

    Then last night, I went to Whole Foods to willingly pay $700 for a head of lettuce just because it is organic and good for me. The cashier put my lettuce at the bottom of the bag and pilled cans and stuff on top. Not only did my $700 lettuce get crushed- on my way to my vehicle the handle ripped off the bag because it was packed too heavy and the groceries fell to the ground…

    Soup Broth to make my own veggie soup….ohhhhh

    pitted dates, dried cranberries and nuts to make my own energy bars

    “crushed lettuce”

    pirates booty (fun snack)
    rice cakes (I’m gonna make my own almond butter so I need something besides apples to put my butta on!
    Mustard (I wanna make veggie burgers as soon as I have time)

    My first grocery shop of the year was a success. Now…If I can only eat this good all year….lol

    See….now I’m happy…talked through my frustration and we are moving on!

    It is DAY 1 of my triathlon training today. I got 7 downloads from my coach Lara, including my training schedule, hydration and nutrition tips, a breakdown on training zones and intensities- (which will be good, and challenging for me because I only have one intensity level- SLOW.)

    My swim this morning was 4 x 250m at a light intensity. I calculated how far that is in my dinky pool- 48 COMPLETE LAPS! WOAH.

    I did it! 48 laps this morning. Took me about an hour.  (hot pic I know…)

    I am ALSO running today with the club at 6pm, it’s our first run together (we are not wasting ANYTIME getting into this program, lol)

    I will most likely start doing 2 posts per day now. One will be just a regular ol post and the other will be a training diary of some kind. I made a new triathlon training link, so follow along- heck even join in. There is still time!

    After the swim, I came upstairs ravenous- I invented a new shake! I call it:

    48 LAPS

    frozen berries
    frozen spinach
    half of a frozen banana
    Vega Powder
    freshly squeezed lemon and oj

    Blend and Serve!

    Here’s me layering the frozen berries and spinach (first time I have EVER put spinach in a shake)

    Then added half a frozen banana and the Vega

    Next up I squeezed some lemon and OJ into it (you could use any juice- the fresher the better!)

    Add some water and BLEND ER UP And VOILA, the “48 Laps” is ready to inhale!

    It tastes delicious and I feel GREEEAAAAT. (take that Tony the Tiger- Meow!)

  • Me having a big resolutions list is probably not a big surprise to you.. ha..

    I know some real dedicated people out there don’t make New Years Resolutions- because they live their best life continuously and don’t feel the need for a big list of resolutions… I, on the other hand, am a dedicated cat, but I definitely have let things go over the holidays. I find the holidays are a big (happy) interruption…

    Everything gets thrown outta wack and January is a perfect time to reset.  In the last couple years, I’ve hit some major goals for myself (such as becoming full time self employed this year!)
    Why stop there? 2011 is going to be the best year yet. At the end of this year, I want to read over this blog post and say- yup, I did it all. I am not going to post everything on here, but I will share with you the majority of what my resolution list looks like:

    1. Complete another Olympic Distance Triathlon

    2. Complete 2 Sprint Distance Triathlon’s

    3. Do at least one half-marathon, a 10km and hike the West Coast Trail- again!

    4. Follow a Vegan, clean eating diet (as best as I can). Don’t beat me up if you see me eating nachos with cheese at the local pub! lol If you want some tips on getting started on a more plant based diet, I recommend reading this.

    5. Host or guest host a TV show

    6. Voice a major phone system like Telus, A T and T, Rogers…something BIG and recurring. (Or voice any major recurring US or Canadian National Spots!)

    7. Make over 6 figures this year with my creative endeavor$ (voice/hosting/makeup/blog)

    (whether I’m in the scene)

    (or behind the scenes)

    8. Meditate at least once per week.

    9. Continue to inspire as many people as possible and keep putting out positive energy into the universe

    10. Get MARRIED!

    The love of my life proposed at midnight on New Years Eve, I totally didn’t see it coming. I hoped that it wouldn’t be too much longer until he popped the question, but he played it off really well! It was such a perfect night, and a perfect start to 2011!

    What are your resolutions?  I would love to hear what your goals are for this year!! DO SHARE!!

    Don’t be afraid to dream big. YES, we don’t want to set ourselves up for failure, however:

    Dreamers are the saviors of the world.

    Right? And goals are just dreams with deadlines. I don’t always hit my goals at the time I set for that particular goal, however I keep pushing on, because I feel that the person I become in pursuit of my dreams is just as important as achieving the dreams themselves. Shoot for the moon and ya might land among the stars….

    Here’s to 2011!
