How was the weekend? I am reporting back to you as a certified raw food chef! I am so excited! Who’s coming to my first class? I am thinking I will set something up at the community centre to start… and I’ll go from there. Out of the whole “raw food” lifestyle, what are you most interested in learning?
Today we ate our dehydrated pizza’s that we made the night before… YUM
It tasted like it could have been a real pizza, but I didn’t have that thug full lethargic feeling after!

A really cool aspect of the class is where WE the students each have to get up and teach a recipe! We picked out of a hat the recipe’s we would have to make, I got the Mock Salmon Pate… It went really well. Here are my Mock Salmon Pate ingredients..

Question. Which animal in nature do we most resemble? Dogs? no. Bears? no. Snakes? no. Cougars? no (except I have a bit of cougar in me since Mike is 7 years younger than me…shhh)
The animal we most resemble is a gorilla. (or chimps, monkeys, etc)
Gorillas become big, strong, beautiful creatures by eating fruits, vegetables, nuts and seeds.
I believe nature has everything we need to become strong, vibrant, healthy beings. Nature doesn’t supply us with Ritz crackers, cream cheese, or chicken wings. That is not to say that these foods don’t TASTE good, because they do… but the more we can base our diets on the abundant live foods mother nature naturally supplies us with- the better. For the earth and ourselves!
The transition off cooked foods is freaking hard! Trust me, I am still in the process, but I do know the way I feel on raw foods is like none other, so the closer I can stick to that, GREAT!
The beauty about raw food is the endless things we can “cook” to make them look and taste like our traditional ways of eating. I am in the middles of my Raw Food Instructor course and I am LOVING all the things I am learning to prepare to make this transition even easier!

In a nutshell (pun intended) this is how it’s made:
CRUST: flax seeds, sprouted buckwheat, red peppers, carrot, celery, garlic..
CHEDDAR CHEESE: pine nuts, macadamia, sunflower seedsm lemon, garlic, nama shoyo, red pepper…
MARINARA: tomatos, parsley, dates, etc….
TOPPINGS: whatever fresh veggies your heart desires.
We are dehydrating this bad boy overnight, so it will be ready by lunch tomorrow. WOOT WOOT

Anyone that knows me, knows my obsession with mexican food…so having a mexican option like this is unreal. With the tortilla shells you can also make chips! Imagine..making your own raw chips with fresh salsa and guacamole… (if only tequila were raw….haha)
We had fresh lemon and Goji Berries in our water… Goji is known as the “longevity fruit.” Its unique master molecule polysaccharides and powerful antioxidants fight against free radicals that cause damage on the body.

Another thing I am going to be all about now is Coconut water and then using the “meat” to make coconut cream pie! I promise within the next couple weeks I will do a video on how to break these nut heads open and reap the rewards!
As I’m sure you can tell I am inspired. The Raw Food Foundation is great and I am really loving it. The studio is in the heart of Coal Harbour/downtown van.

I finally got our wedding invitations ordered. It was not an easy breezy or enjoyable task (at least for me). I sent the proof to a couple of my well articulated friends who could help me write out the invitation as best as possible. That helped me big time and now they are being printed.
I watched a cute video of Mike in grade 3 today and it made me wonder if we met when we where little tikes would we still be best friends? Here we are old skool as kids, I have a brown tooth because my older brother pushed me down the stairs when I was 2 and my tooth was bruised brown until it fell out. Oh and I was an aspiring dancer in dancing because my mom forced me. Mike’s just a little cutie with a cool necklace.
Now were big tikes and we ARE best friends and we ARE getting married!! (unless he gets cold feet and runs away)

One “wish” that turned into a “will” that has changed my path is my new found journey with raw food. I have so much love for raw food and how energetic and alive it makes me. So much that, this weekend, as we speak I am becoming a Raw Food Instructor through The Raw Food Foundation!
We’ve recently made these To do for wraps and stuffed mushrooms that I am going to make for my mom next week and see if I can’t convince her to add a bit more raw food to her diet!

So good. I could eat the whole torte…

This morning I took some of my new skills (ha, you don’t need skills it’s so easy!) and I made some:
ONE BITE BROWNIES
1 1/2 cups walnuts
14 medjool dates
1/2 cup cacao powder
1/4-1/2 tsp vanilla bean powder
Pinch of salt
Process walnuts until fine. Add remaining ingredients. Form into cubes on plate, roll in coconut if desired and refrigerate until firm.
Here is All you need!
Throw in the nuts..
add in the rest of your ingredients (and please ignore my half chipped nail polish still on from Marianne’s wedding.
I formed them into cubes and put them on a fancy new plate I got as a bridal shower gift… (throw them in the fridge for a bit)

After all my bickering yesterday, I actually got around to doing those wonderful activities that make me feel better. 6am yoga was glorious. The sun was actually rising as we were doing the salutations. Great way to start the day. I will be going 3 mornings a week. I bought a 3 month pass!
I also cleaned my place! Woot woot. I didn’t do like a spring clean 5000 or anything, but everything went back in it’s place and it is clean!
The dog continues to be deathly afraid of the vacuum cleaner, haha
Here’s a GREAT TIP (Contemporary Feng Shui with Mark Ainley) Take a shelf, empty it, dust and clean it off, and put things back. You may notice a different relationship with the objects and the space, even if you place everything back as you did (and you probably won’t…). A great simple way to both clean and refresh!

I had a trip to the dentist today (BOOOOO). While I layed there with metal things flying at my mouth, the dentist and the assistant (2 females) were discussing how one of their uncles who was 72 had an affair with his wife’s best friend who was only 45. Then they talked about 9/11 being a conspiracy. Then they talked about how Cameron Diaz and A-Rod broke up. Then they talked about the dentists husband and how he is in a HUGE fight with his brother. I couldn’t turn the headphones to the tv up loud enough! haha
I came home and tried to clear my mind by backing Raw Sunburgers!

So I soaked the sunflowers seeds..
Processed the carrots and added them to the sunflower seed mush.
Blended up the rest of the ingredients and stirred it all together.
Then placed them in my oven where they are now dehydrating. I started the first hour at 120 degrees and now they are at 105 degrees. They are almost done.
The are supposed to look like this! Mmm, this was one of the delicious meals at Ocean Resort’s Spa and Raw food weekend.

I was so inspired by that trip. THIS weekend I am becoming a certified raw chef. woo hoo.
I just really like eating raw when possible. Eating live, living raw food that feeds and nourishes the cells.
I feel like I’ve learnt a lot in a year. Last year, when I looked at all these ingredients I had no idea why or what to use them for. Now, I feel so much more connected to this lifestyle, that these foods now make sense and I understand how beneficial it is to stay away from processed foods! (still have tons to learn)
I stepped out of my comfort box a bit and tried a “Red Fire” elixor. Made with beets, ginger, carrots and apple… Not bad at all..My “reward” after the juice was a couple amazing raw vegan macaroons. SCORE.
On Monday it will be 30 days on my Raw Food “challenge”. It was not a challenge. I loved it. It’s fun, easy, I lost at least 5 pounds and I feel RAWSOME. This raw lifestyle will definitely continue on. (I’m never gonna slap a 100% raw label on myself though. I will always try to make the best decisions, but sometimes life happens and I am a smooth operator)
I picked up some fancy raw croutons, unsweetened coconut, and some sundried tomoatoes.
After Organic Lives, I went to Grouse Mountain to pick up my VIP pass for the Live at Squamish music festival!!!
Remember a few days back when I entered the VIP blogger contest? -I had to write about why I should go to the music festival… Well I WON!!

Other than that today I voiced projects, cleaned up a bit, took dog out, checked mail, dropped off wine to a friend whose birthday is today, got my bangs trimmed, helped Mike edit new Stormtech video….. that’s about it!!!
Can’t wait to see what tomorrow brings… (getting eyebrows threaded, meeting friend for lunch, going to mall to find concert outfit, NEED to clean more, voice more, wash my make up brushes….) What else? Like Britney says, “Gimme me more, gimme more, gimme mooooore…”
