  • Hey!!

    Wazzzz uppp? Bizzzzzy day here! It is 3pm and besides my Green Shake, right now has been my first chance to eat something! I am eating Amy’s Organic Alphabet Soup with added veggies, (I am repenting for my overindulging last week;)

    Today I have had a few different projects on the go, including this phone system

    See, on the left is what I have to name the individual voice file, and on the right is the phrase I speak.
    So each file is sent separately. Today I only had 76 files, sometimes it’s hundreds.

    Then they integrate it into a phone system and Voila!

    So in regards to the title of this post- NO I am not married, but I feel like I’m in grade 9 when I say “boyfriend”, I am so DONE with that word! lol, hint, hint…
    I got a text from my hopefully future husband, who is out on the rigs right now and he said he put his burritos (i made him) in the microwave and all the rig guys were like- “dude, that smells good, where’d you get that?” OMG, that made my day… I did good in the kitchen?? I am turning into a domesticated, but still independent woman. When I was younger I used to say to myself, “I will never cook for anyone.” BUT….things change. When you love someone so much, you want to make them happy…right? And seriously ladies, making my future husband lunch, makes him HAPPY!

    Here is what I made..soooo not fancy, but I could make a stack of them and keep in the freezer, so all he has to do it toss it in the microwave at lunch time.

    Sorta Ghetto, But Filling Chicken and Rice Burritos

    Grab some Tortillas and cut up some red pepper

    Cook up some chicken breasts and make some whole grain brown rice and add in Black Beans

    Put the bean rice, chicken, red peppers and some salsa on the tortilla

    Roll em up in a paper towel, and then saran wrap, so your husband can just take off the saran wrap and place in microwave

    BAM… NOW YOUR A HERO!

  • Hello Monday Morning!!

    I am writing my blog in between auditions this morning. Just did one for Anthony’s Insurance in Newfoundland! ;)

    I am still on a sugar high (or is this a sugar hangover now?) anyway- I ATE A LOT OF COOKIES yesterday! Only reason is I had to do quality control on my outgoing goods.

    I went to my 27th Yoga class in a row yesterday morning and I then I eagerly headed over to Andrea’s.

    We bundled up and walked over to Michaels Craft store to look pick up some supplies and while we were in the store-  WE GOT ATTACKED BY SOME CRAZY WOMAN IN MICHAELS! This lady had her headphones in and was looking at ribbon, Andrea and I were beside her looking as well. Andrea reached up above her to grab some ribbon and the woman got startled:

    Crazy Lady (really mad)-”God- warn someone if your going to do that”

    Andrea- “sorry I said I was just reaching above you, but you couldn’t hear me since your headphones were in!”

    Crazy Lady- “OHH, so your gonna get like that are you?”

    Andrea and me- “Whaaaaat?” and we start laughing cause we couldn’t believe this was happening.

    Then the crazy lady THROWS  a spool of ribbon at Andrea in the chest, swears at us and walks away, calling Andrea a psycho!

    My heart started beating really fast at that point, it was sooo nuts!! In our friendly neighbourhood Michaels store. We did not do anything wrong. Something bad is going on in her life, I wish her well.  We got our ribbon and boxes, chuckled the whole way home, saying “Did that just happen? Did you just get ribbon thrown at you in Michaels?” Lucky we weren’t in the knife isle!

    Ok, now we can bake! Andrea’s house was decorated so nicely. I love her pink tree. We cranked the Christmas music and her husband Rick watched football:)

    I was baking Vegan Dark Chocolate Mint Cookies.

    Here is me concentrating really hard, I had to focus.

    Okay, separate the wets and the drys….got it!

    UH OH, I forgot to bring over maple syrup, Andrea had blueberry syrup though…in a pinch- it’ll do!

    Put my guys in the oven and VOILA!They worked really well and tasted great!

    I got the recipe from Vive le Vegan

    Vegan Dark Chocolate Mint Cookies

    1 bar (3-oz/85-g) mint dark chocolate (see note)
    1 1/8 cups spelt flour (see note)
    3 tbsp cocoa powder
    1 tsp baking powder
    ½ tsp baking soda
    ¼ cup unrefined sugar
    ¼ tsp sea salt
    ¼ cup pure maple syrup
    2 tbsp agave nectar
    1 tsp pure vanilla extract
    ½ tsp mint extract
    ¼ cup organic canola oil (a touch generous)

    Preheat oven to 350°F (180°C). Break off 9 squares from chocolate bar (about 2/ 3 of bar, reserve remaining squares to top cookies) and place in mini-food processor, processing until finely chopped (or chop by hand). Transfer to a bowl and combine with dry ingredients, sifting in flour, cocoa powder, baking powder, and baking soda, and stir until well combined. In a separate bowl, combine syrup, agave nectar, vanilla and mint extracts, and oil and stir until well mixed. Add wet mixture to dry, and stir until just well combined (do not overmix). Line a baking sheet
    with parchment paper. Spoon batter onto baking sheet, spacing evenly. Break up or roughly chop reserved chocolate and place on top of each cookie, pressing in a little. Bake for 11 minutes (no longer, or they will dry out). Remove from oven, and let cool for 1 minute (no longer) on the sheet, then transfer to a cooling rack.

    Notes:

    1) Use a dark chocolate bar that is mint flavored, rather than a mint cream-filled dark chocolate bar. For this recipe, try the Endangered Species brand Dark Chocolate with Deep Forest Mint, or Cocoa Camino’s Mint Chocolate Bar (exceptionally good)!

    2) If you want to use unbleached all purpose flour instead of spelt, use just 1 cup. If batter seems too dry or thick whichever flour you are using, stir in another 1–2 tsp each of oil and maple syrup.

    3) For the holidays, make these cookies festive by sprinkling 1–2 tbsp crushed or chopped candy canes on cookies before baking, and lightly press in.

    Andrea was busy slaving away at her Macaroon cookies, (little did she know she was making my favourite cookie!)

    I was having so much fun, I decided I wanted to make vegan chocolate chip cookies. I didn’t have oil though, so we walked to the store in our santa hats to get me some oil.

    Got back and started cookie #2

    (I’m getting used to the wet and dry thing!)

    I put in tonnes of chocolate chips

    And Voila!

    These are soo good and I am twitching because I know I have some right now in my freezer!! ahhhhh!!! (please Amanda, save them for family, friends and Michael!)

    Here is the Vegan Chocolate Chocolate Chip Cookie recipe (from vegweb.com)

    2 cups unbleached flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    cinnamon, to taste, optional
    vegan chocolate or carob chips, put in as many as you like
    1 cup raw sugar (turbinado #1; sucanat works too, but sucks up a lot of the moisture)
    1/2 cup canola or vegetable oil
    1 teaspoon vanilla
    1/4 cup water

    Directions:

    Very important-make sure all ingredients are at room temperature. It will work if they’re not at room temp but it works much better if they are. Also while your oven is pre-heating put the cookie sheets you are going to use on top of the oven so they get preheated as well.

    1. Preheat oven to 350 degrees F.  In a large bowl, mix together flour, baking powder, salt, and cinnamon. Stir in chips. Make a well in the center and set aside.

    2. In a medium size bowl, add together sugar and oil; mix well.  Add the vanilla and then add the water; mix well.  Add the wet to the well in the dry. Mix it well but be careful not to overwork it.  Add more chips if you need to.

    3. Spoon onto ungreased cookie sheets.  Put them in the oven.  Bake for 5 minutes and then flip and rotate the sheets (top to bottom & 180 degree rotation). Bake another 4 minutes and check them. The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool. I usually go in two minute increments from here until they get to where I like them.

    4. Take them out when they are done and move them to wire cooling racks. If they split or come apart when you try to remove them let them sit on the pan for 2 minutes before transferring them to the racks.

    We are giving some of our cookies away to friends as gifts:) So I got my little boxes out, lined it with red tissue and some wax paper. Each cookie box fit 3 cookies.

    When I worked at Kiehls, I learnt how to tie bowtie’s! lol

    Andrea’s box held a lot more than 3 cookies, Looks sooo pretty!

    I highly recommended getting some girls together for a baking marathon it is lots of fun.

    All I want for Christmas is a tree full of cute shoes…. :)

    Happy Sunday! I let myself sleep in today. IT WAS GLORIOUS! Best sleep ever. Sometimes when I know I have to get up really early, I can’t fall asleep cause I stress about having to get up! That will be tomorrow. Monday morning. YAY and NAY. YAY because you never know what opportunities lie ahead for the week and NAY because, well, getting up at 5:15am sucks! If you guys think I’m positive- you gotta check out morningcoach.com. JB (the founder) doesn’t use the word “alarm clock”, he calls it an “opportunity clock”..haha. Try that one Monday morning!

    So I woke up about 8:30am (yes thats sleeping in for me), made some coffee and realized, I gotta get to yoga pretty quick in order to fit it in the day. AND I need to bring some food with me to get me through the day…SOOO yesterday I went to Whole Foods and bought all the fixings to make my own Lara Bars. Next time you are in a store that sells them, look at the ingredients.

    There is like 3 ingredients! Awesome- now let’s make our own to save on $$. The cool thing is, when you make your own, you can get creative and put whatever you want in them! (I know I’ve made them before on the blog- but we have a lot of new readers, so let’s do it again!) All you need is a lil tub of dates- and whatever fixings you feel like.

    A “HOT DATE” with dates!  Organic? Even HOTTER! OWWWW!

    I am going to use dried cranberries and cashews- (don’t ya hate when you buy bulk and you pour too much by mistake? Then what do you do? I was going to leave them and get another bag- but worker stocking shelves was watching. DAMN. $70 worth of cashews!!! (not that bad-but more than I wanted)

    Halfway through pitting the dates, I decided I would bake some bananas to add (now it’s not as fast- but still easy).

    Now, while they bake in the oven and make your home smell amazing, get everything ready in your processor. (If you don’t have a processor-get one-awesome investment. We got our at Costco for about $75)

    Then…write a blog while you wait for the bananas. ummmmmm hi! ahhhh….what’s new? Have you seen any good moustaches for Movember? This one is my favourite…..

    Checking on banana’s. Ok, good enough. Toss em in and let’s go for a spin!WeeeeeeeAfter a while it will start to ball upThen dump it on a piece of saran wrap so you don’t have to touch it- all sticky.I rolled it in the saran wrap, then smoothed it out, using a little baggie on my hand. Now cut it up!You can definitely take more time to cut them into nice bars, I was kind of in a hurry. Then throw them in the fridge so they harden.

    Now, I totally just wing it, but if you want to get “technical” with the measurements, here is one I found online:

    1/4 cup chopped dates (roughly chopped whole dates, not pre -chopped)

    1/4 cup dried cherries or dried cranberries

    1/3 cup whole pecans, almonds or walnuts

    1/8 teaspoon cinnamon

    That recipe looks like it would make about 2 bars. Do it like I do and just wing it, You will do fine:)

    How are you? I am very good!! This post is up wayy later than I had planned, but that’s how she goes.

    What we are talking about today is my morning healthy green shake which is starting to become a habit.

    I am really enjoying it…and the benefits it provides! I have been getting questions on how to make it and what’s in it…
    I usually make this shake right upon waking..(hence the title..Wake…..and SHAKE! (clever, I know;)
    But I wanted to make a little video for you, so you can get the visual of the whole experience!

    Another feature I added to the site is my weekly workouts. Look up at the top right of the website. It says “Weekly Workouts”. I will document my “desired” training schedule, and beside it, I will put what I actually did. I was going to write these goals down in a book of mine, but then I saw the idea on another blog to put it on the website…. I thought…why not put it on here? BAM

  • Hey!!

    Strange feeling here because I blog everyday, but I feel like I haven’t written anything in a long time?? Does. not. make. sense. So…guess what…I’m back?? (even though I never left)

    Well, to be honest, I feel like my head has been in a cloud the last few days, and yesterday it technically was:
    English Bay was in this weird cloud thingy all evening:Mike was taking pictures from home, while I was out on a walk with a couple girlfriends and took a picture of my home:
    Pretty neat how he took pictures from above the cloud and I was right in it. Now irony sets in as I feel like my head is in a cloud. Feeling a bit off and not as motivated as I’d like to be. Maybe I drank a little to much on my yellowknife trip, maybe I miss my mom, or just kinda feel out of it with the season changing, but I feel something needs to change. I think 99% of it is in my head. I just need to get back on track and get back into feeling on fire and giving it all I got.

    Do you ever feel like that? Like cobwebs are in your head and your not really sure what is wrong?

    This morning, I acted in spite of my lack of motivation. I did over 10 voice auditions, then I completed and edited a 3 page project. I usually wait for Mike to be home to help me with the editing on big projects, but I thought. JUST DO IT NOW!  Get it done and off my plate. Now I am writing my blog, while I make some oatmeal and am already dressed to head out for a run.

    I am RE-STARTING P90x on Monday. I got about a month into it, and then took a week off while in Yellowknife. Mike wants to give it a try as well, so I agreed to restart the program with him on Monday.

    Have you ever started something like a fitness plan and restarted?

    I feel kinda bad for starting over, but in the end it is just another month of Tony Horton added on, so it will benefit me right? I don’t know if I can STAND an extra month of Tony (he is the instructor on p90x ;) but maybe I’ll turn the volume off, lol

    I think it is important to keep moving, keep getting things done, don’t stop. Even if your maybe feeling a bit down or off. The WORST thing we can do is feel sorry for ourselves, play a victim, and procrastinate on things that need to get done (Which I do from time to time, but not this time!!!!!) We can do ANYTHING we put our minds to.

    If you feel like you need a good, hearty warm meal to soothe your soul, try this Veggie Chili Recipe I got from my sister in law, Marianne:

    Marianne’s Veggie Chili

    sautee 1 yellow onion in butter (or oil if you want to keep this vegan)
    2 cans of sliced mushrooms OR nearly two cups of fresh (if fresh, sautee with onions before adding)
    add 2 large cans of whole tomatoes (give ‘em a squeeze when you’re adding these to the pot)
    1 can kidney beans

    1 can black beans

    1 can bean medley (or chick peas or BOTH!)

    1 can of tomato paste

    1 package taco seasoning
    2 tbsp chili powder
    2 tsp agave nector (or honey is great too!)
    1 tbsp cumin

    I simmer for about 30-45 minutes stirring frequently.

    This will bring tears to your eyes! lol

    MMMMMM, this will cure anything!!! We had this after a day of hiking in Yellowknife and it totally hit the spot.
