    So in all the classes I’ve been going to lately I keep hearing about how AMAZING coconut water is for you: all-natural, super-hydrating, nutrient-packed, potassium-stacked, mega-electrolyte. It is also extremely close in makeup to human blood plasma. They use it as the intravenous fluid is some countries. So it is super good for us.

    You need to get the young thai coconut and shave down the top a bit so you can pry it open easier….

    Once you shave it down and start to expose a bit of the brown, or the layer starts to look thin, grab a cleaver, or edge of your knife (careful though cause it could break the knife. use a crappy one if you want.

    Start jabbing around the top, kinda like “connecting the dots, la la la la, connect the dots la la la la! ha. Once you’ve hit a sweet spot and the “lid” is loose, then it’s time to pry it open..

    I dumped the water into a bowl..

    Then with a cheese cloth, nut bag or the toe of some (new) nylons, drain the water into the glass  (all the “bits” will be gone if you strain it. You could still drink it with a straw right out of the coconut though..

    The taste? Not bad. I am getting more used to it the more I drink it. Kinda sweet, kinda salty, kinda coconutty…

    Then with the back a spoon, pry out the meat.

    “Filet” the meat so there is no brown chunks on it.

    I had no motivation to make anything fancy with the “meat” so I decided to make fake “beef jerky” with the meat. I had heard of a recipe for it. So I googled it. I found that really you can put ANY spices on it (if you marinate it- even better) But I just tossed it into a bowl of soya sauce, salt, garlic salt, onion bits,worcester sauce, poultry spices and dehydrated it all day.

    I put a bit to much salt on it, but Mike LOVED them.

    Day 2 of my yoga challenge! I went in the mid afternoon to kinda take a break (and I slept in for the morning class…ha)
    I am doing makeup for a friend’s wedding tomorrow….SO I will do yoga in the am….

    Next time you walk by that lonely coconut in the grocery store, pick one up and have some fun!

    My real Myth Buster was: Can you really make RAW chips, salsa, guac AND non-dairy sour cream?

    Ok guys and girls… write this down:

    For the tortilla chips:
    -4 cups of frozen corn (organic if possible)
    -1/2 cup of ground flax seeds (not soaked)
    -1/2 cup orange juice
    1 clove garlic (or more if you like…hee hee)
    -1/8 teaspoon of salt

    Then process until very smooth and spread thinly in your dehydrator (or oven at 110 degress)

    You want these puppies spread thin. I had 3 baking sheets filled in my oven. Flip tortilla’s after 3 hours and continue dehydrating the other side for about 2 more hours. (Just keep an eye on them. Until they are crisp!!

    If you didn’t dehydrate these as long you could use them as wraps for enchilada’s….

    But I dehydrated them for quite a while and happily snapped them into chips.

    k, Salsa… Easy… a few tomatoes, 1/2 an onion, a bit of green onion, 1/4 cup cilantro, a few jalapeno’s, and some yellow peppers just because I had em…., salt too…

    ALL CHOPPED UP!

    GUAC…. we only used 1 mashed ripened avocado, 1 clove mashed garlic, 1/2 squeeze lemon juice. (you can add onions, peppers, tomatoes, cilantro if you like..)

    NON-Dairy Sour cream…
    -1 cup of cashews (soaked for 2- 6 hours)
    -1/4-1/2 teaspoon of sea salt
    -3 Tablespoons of lemon juice

    Blend until very smooth and you’re good to go!

    THIS MYTH HAS BEEN CONFIRMED! You can have a raw mexican fiesta. Just not sure about tequila…but this food you see below tasted fresh, light, but oh so filling. Dairy, preservative, and even oil free…. I can’t believe it’s not butter cooked.

    Oh, and while we enjoyed our delicacies, we actually watched Myth Busters online, (No, we don’t own a television…)

    I have 2 Tomboy’s of the month lined up now. They will be getting me back the questions soon (I hope;) No worries though, we don’t skip a beat here.

    I am in the middle of a 4 week course called Feed Life, Starve cancer.  “Feed Life Starve Cancer is designed to help you understand how cancer works and how to starve it through food, exercise and the mind body connection.”

    On Tuesday we made elixers with ingredients such as green tea, blueberry and ginger.

    It tasted really good and is chock full of free radical fighting antioxidants.

    Of course there are a lot of components that make up why one would get cancer. (genetics, lifestyle, stress levels, emotional stress, diet) If you’ve ever lost anyone to cancer (which we all have) It’s frustrating to think, “oh ya right, so if my loved one would have just drank green tea they would still be here?”  I don’t know the answer, but I do know that cancer cells thrive off acidity and fermented sugars and  in our body, (things like sugar, processed foods, dairy, meat). So why wouldn’t one TRY (it’s hard, I know) to eliminate or at least cut down on those foods that cancer thrives off?

    The classes are lead by holistic nutritionist and cancer survivor Eden Macdonald. She is an amazing gal, extremely passionate, informative and full of knowledge. (she is also the healthy eating initiative at Whole Foods in Vancouver)

    The Feed Life, Starve Cancer Program recommends that you:

    -eating a RAINBOW of fruits and veggies

    -drink lots of water

    -Increase fiber consumption

    -reduce animal products

    -reduce calories

    -do not eat oil (this is a different concept for a lot of raw foodists)

    EAT MORE KALE. We made a Kale salad with the leaves drenched in Avocado rather than oil.

    We also made a few different grain dishes. This one below is Forbidden rice. As a group we participated and came up with what we wanted to add to it.

    ·         Walnuts
    ·         Orange
    ·         Mint

    The theory behind our added ingredients is to always add a fat, acid, sweet, spice and salt to our foods.

    Here are some examples of the 5 tastes to add to every dish to make it taste fab!
    FAT – avocado, walnuts, cashews, hemp seeds, ground flax seeds, olives
    ACID – lime juice, orange juice, red wine, rice wine vinegar, apple cider vinegar
    SALT – sea salt, celery, olives, sundried tomatoes,
    SWEET – fruit juice, fruit vinegars, dried fruit (apricots, peaches, apples, mangoes), apple sauce, berries, carrot or beet juice with fresh herbs and garlic
    SPICE – Fresh and dried herbs (dill, basil, parsley, rocket, cilantro etc) chili peppers, curry powder, ginger, garlic

  • Hey friends!

    Hope your having a glorious weekend. I’ve been getting my “raw on”, as I am taking a raw food instructor course.

    Question. Which animal in nature do we most resemble? Dogs? no. Bears? no. Snakes? no. Cougars? no (except I have a bit of cougar in me since Mike is 7 years younger than me…shhh)

    The animal we most resemble is a gorilla. (or chimps, monkeys, etc)

    Gorillas become big, strong, beautiful creatures by eating fruits, vegetables, nuts and seeds.

    I believe nature has everything we need to become strong, vibrant, healthy beings. Nature doesn’t supply us with Ritz crackers, cream cheese, or chicken wings. That is not to say that these foods don’t TASTE good, because they do… but the more we can base our diets on the abundant live foods mother nature naturally supplies us with- the better. For the earth and ourselves!

    The transition off cooked foods is freaking hard! Trust me, I am still in the process, but I do know the way I feel on raw foods is like none other, so the closer I can stick to that, GREAT!

    The beauty about raw food is the endless things we can “cook” to make them look and taste like our traditional ways of eating.  I am in the middles of my Raw Food Instructor course and I am LOVING all the things I am learning to prepare to make this transition even easier!

    I didn’t get a chance to take as many pictures as I would have liked to today, but check out this raw pizza we made!!!

    In a nutshell (pun intended) this is how it’s made:

    CRUST:  flax seeds, sprouted buckwheat, red peppers, carrot, celery, garlic..

    CHEDDAR CHEESE: pine nuts, macadamia, sunflower seedsm lemon, garlic, nama shoyo, red pepper…

    MARINARA: tomatos, parsley, dates, etc….

    TOPPINGS: whatever fresh veggies your heart desires.

    We are dehydrating this bad boy overnight, so it will be ready by lunch tomorrow. WOOT WOOT

    Anyone that knows me, knows my obsession with mexican food…so having a mexican option like this is unreal. With the tortilla shells you can also make chips! Imagine..making your own raw chips with fresh salsa and guacamole… (if only tequila were raw….haha)

    We had fresh lemon and Goji Berries in our water… Goji is known as the “longevity fruit.” Its unique master molecule polysaccharides and powerful antioxidants fight against free radicals that cause damage on the body.

    2 must have items that are now on my shopping list are:

    Another thing I am going to be all about now is Coconut water and then using the “meat” to make coconut cream pie! I promise within the next couple weeks I will do a video on how to break these nut heads open and reap the rewards!

    As I’m sure you can tell I am inspired. The Raw Food Foundation is great and I am really loving it. The studio is in the heart of Coal Harbour/downtown van.

  • Hello!

    I finally got our wedding invitations ordered. It was not an easy breezy or enjoyable task (at least for me). I sent the proof to a couple of my well articulated friends who could help me write out the invitation as best as possible. That helped me big time and now they are being printed.

    I watched a cute video of Mike in grade 3 today and it made me wonder if we met when we where little tikes would we still be best friends? Here we are old skool as kids, I have a brown tooth because my older brother pushed me down the stairs when I was 2 and my tooth was bruised brown until it fell out. Oh and I was an aspiring dancer in dancing because my mom forced me. Mike‘s just a little cutie with a cool necklace.

    Now were big tikes and we ARE best friends and we ARE getting married!! (unless he gets cold feet and runs away)

    Here’s my quote of the day…..

    One “wish” that turned into a “will” that has changed my path is my new found journey with raw food. I have so much love for raw food and how energetic and alive it makes me. So much that, this weekend, as we speak I am becoming a Raw Food Instructor through The Raw Food Foundation!

    We’ve recently made these To do for wraps and stuffed mushrooms that I am going to make for my mom next week and see if I can’t convince her to add a bit more raw food to her diet!

    This morning I took some of my new skills (ha, you don’t need skills it’s so easy!) and I made some:

    ONE BITE BROWNIES

    1 1/2 cups walnuts

    14 medjool dates

    1/2 cup cacao powder

    1/4-1/2 tsp vanilla bean powder

    Pinch of salt

    Process walnuts until fine. Add remaining ingredients. Form into cubes on plate, roll in coconut if desired and refrigerate until firm.

    Here is All you need!

    add in the rest of your ingredients (and please ignore my half chipped nail polish still on from Marianne’s wedding.

    I formed them into cubes and put them on a fancy new plate I got as a bridal shower gift… (throw them in the fridge for a bit)
