    It’s been busy here in Yellowknife. I have tons of pictures from our race yesterday.

    We are about to go out snowmobiling, so here’s a few from the beginning of our adventure so far/race day!

    Then we went to the pre race orientation and the filled us in on things like how to deal with frost bite, hypothermia, if you fall in a lake, wild life, snow blindness, etc…Yellowknife, Frostbite 45, NTW

    Back at the house Marianne made us a delicious meal last night!

    It was the 12th Annual Healthy Chef Competition. It’s put on by the BC Chef’s Association and the BC Produce Marketing Association.

    We walked in and got a feel for the space, lots of people

    Judges went around to each of the contestant’s stations and tested out the food. (Judging was based on which establishment could make the healthiest, tastiest dish)

    This is Edgar Rahal (Chairman of the Board – B.C Chef’s Association), I asked him if it’s fun to be a judge and he said, ‘uhh, yaaa.. I mean I’ve been doing it 30 years!”

    Then it was time for us to take our seats, time for us to try the food! At each seat, there was an envelope with 2 tickets in it. They told you who would be making your entree and who would make your dessert! This is what I got… B.C Chef's AssociationI opted for the vegetarian dishHere are some of the other entrees

    Here are some of the chef’s and their dishes:

    Kent Wong – Head Chef, Imperial Seafood Restaurant
    1.  Entrée: Poached Scallops and Tiger Prawns in Broth, Complemented with Asparagus
    2.  Dessert:  Strawberry Samplers-  A trio of Strawberry Desserts: Strawberry Egg Tarts, Strawberry Cream Roulade Cake, and Strawberry Osmanthus Aspic( made with Agar Agar)

    Chef Garly Leung – Master Dim Sum Chef
    Chef Sam Leung – Executive Chef
    1. Entrée: Pomegranate Chicken—Diced   Chicken and Sea Cucumber lightly stir-fried, then wrapped in egg white  omelette to resemble a  pomegranate , accompanied with 16 grains Steamed in Lotus leaves. The entire entrée contributes only 270 calories per plate
    2. Dessert Trio:  A   3 –Tiered Aspic Pudding, A Porcupine Shape Pastry and a Marshmallow Bunny on the desert plate, garnished with filigree made with Choux   Paste

    1.      Entrée:  Wild Sockeye Salmon wrapped in Organic Lettuce Leaves, Steamed and Set on top of circle of Organic Rice Melange, Japanese Kabocha Pumpkin. Accompanied with Mussels Marinara and Lemongrass Gastrique
    2. Dessert:  Panna Cotta Mi Amore:  A light version of Panna Cotta, made with Almond Breeze, Amaretto di Saronno and Agave Nectar,  Served in Tuiles Amandine, garnished with Forest Berries. Drizzled with Chambord Royale Coulis

    At our table I sat with a couple of other bloggers! It was sooo much fun getting to know them!

    On our way out we each got to take a box of fresh fruits and veggies and a goodie bag! (Mike was nibbling on the cucumbers this morning)

    It was a great evening! (Special thanks to Dawn from Go Golf Events)

    Ladies, we should be getting 7-8 servings of fruits and veggies a day. Men- 8-10. Mix it up! Try some produce you’ve never picked up before, you just might like it! When I made my soup a couple weeks back- it was the first time I tried beets.. and guess what? I liked them!

    Construction is the name and outside my window is the game!! YUP- not much new to report on that except that it is still going on, it’s still drivin me mental and they still remind me of the Doozers from Fragile Rock!doozers vs humans

    On a lighter note… I wanted to share with you some awesome tips on how to drink more water!

    We all know the reasons we should drink more water:

    -cleansing
    -hydration
    -digestion
    -fluid joints
    -headache prevention
    -weight loss
    -healthy skin
    -and many more

    Water heals.. Where does your intake land on the “enough” scale? Are you at the recommended 8-10+ glasses a day?

    Here on some tips to help you sneak in more h20:

    #1. Get some kind of a water filter system. We use a Brita pitcher and keep it on the counter so it stays at room temperature. I can drink more when it’s not cold and also water at room temperature is way better for your vocal chords.#2.Buy yourself a cute water bottle that you want to bring out and about with you.. .(and don’t forget it! haha)#3. I always have a glass of water at my bedside and as soon as I get up in the morning- You guessed it- I drink it!

    #4. Mike likes to cut up lemons in his water at night and then in the morning drink the lemon water- great tip for cleansing liver!#5. I thought up this tip last week when I was getting my hair done. When you are at a salon, the dentist, a massage, or ANY kind of service where they tend to offer you water as soon and you walk in... SAY YES! A reflex reaction might be to say, ‘Oh no thanks, I’m fine. ” (I know I said that sometimes- until now;)

    #6. Before you eat a meal, especially if your out at a restaurant, try to down at least half a glass before you drink or eat anything else. (I always order my water no ice, so I can drink it faster!)

    #7. Take a water break! Every time you take a break at work, try to actually drink some water if you’re standing at the water cooler!water cooler talk#8. Exercise! That should make you thirsty!

    #9. Be sure to bring water in your car to and from work or where ever you may be going….

    #10. NOW! Get up now and drink a glass of water. You can resume reading after that. GO! I’ll race you!!!

  • Oh Monday… Be good to me;) lol

    Last night I couldn’t sleep :( and as the icing on the cake, Mike was snoring AND talking in sleep. Here is what went down in the middle of the night…

    Mike “Do you have anything?”
    Me “What do you mean?”
    Mike “Do you have anything????” (a bit louder this time)
    Me Mike! Do I have anything what? What do you mean? Your talking in your sleep!”
    Mike “Do you have anything recorded yet?”

    At this point I woke him up. It freaks me out when he’s sleep talking!! He does this now and again, he’s done it in front of my brother too. Apparently Mike was sleeping and he said “BOO!” really loud and starts laughing- All in his sleep!!

    Ahhh, the joys of sharing your life with someone! (and your bed, haha) We have a queen size- I want a king!

    When we are fully awake we have been getting our supplies ready for our 45km trek this weekend in Yellowknife!

    Here is our check list from the website:

    Mandatory Equipment

    • Route map (provided by us)
    • Backpack
    • Thermos (1 litre at least)
    • Fire starter (i.e., lighter or matches)
    • Personal first aid kit (with blister supplies)
    • Headlamp & spare batteries
    • Red LED light for your backpack
    • Emergency food of 1000 calories (about 4 granola bars)
    • Knife or multi-tool
    • Space blanket or bivvy bag
    • Spare heavyweight toque
    • Spare heavyweight mitts
    • Spare heavyweight socks
    • Sunglasses
    • Whistle
    • Windbreaker
    • Appropriate clothing for the event!!

    Optional items:

    • Drinking cup (for water at checkpoints)
    • Sunblock and lip balm
    • Pocket heat packs
    • Ski goggles

    Well looky here, how about we make our own Granola Bars?homemade granola bars, vegan, raw

    HOMEMADE GRANOLA BARS

    -1.5 cups of oats

    -1/2 cup of coconut

    -1 ripe banana

    1/2 cup of chocolate chips (or as many as you want)

    1/2 raisins (which I didn’t have, so I went without)

    1/2 cup maple syrup or agave nectar

    1/2cup peanut butter (I used almond butter)

    2Tb of flax seed (optional)

    1.5 tsp cinnamon

    1tsp vanilla

    I have the WORST handwriting known to man….

    All your gear

    Start by mashing up your banana in a bowlhomemade granola bars

    Start to add in all your other ingredients… Oats, coconuthomemade granola bars
    My favourite ingredient! Chocolate chipshomemade granola bars

    Mix it well.

    Then I lined a tupperware container with saran wrap and pressed it down.homemade granola bars

    I left them to sit over night in the freezer to congeal and took them out this morning and cut em uphomemade granola bars

    They are super yummy and taste A LOT like Cliff Barshomemade granola bars

    If you make your own- be creative. You can add in whatever appeals to you…
    OK…one thing is checked off the Mandatory list! haha

    This is a super exciting week, filled with action… If you are looking for something fun to do, join us this Wednesday at The Healthy Chef Competition and dinner at The Hyatt Regency Vancouver! It’s a competition between local chefs to see who can make the best tasting dishes out of local produce and healthy foods.Every guest will be given a generous box of produce: apples, pears, bananas, oranges, lemons, potatoes, squash, dried mushrooms, and snow peas, along with recipes and lots of great nutritional ideas! I cannot wait to attend this event!!! Tickets are here!

    Now, Mike and I are off to get a helmet camera for our upcoming adventure in Yellowknife. Wooo Hooo!
